HIGH ALTITUDE COOKING CLASS
This activity will not only allow you to enjoy a unique culinary experience, but it will also
contribute to helping the families of the community to have sustainable job opportunities, while
preserving Andean traditions, culture, and heritage of knowledge that has been passed down for
generations for hundreds of years.
Program Description:
Immerse yourself in the heart of the Andes to meet its beautiful people and marvel at their
traditions.
We will be welcomed into the home of a Quechua family, who greet us with warm smiles and
songs in their native language, Quechua.
To learn more about the culture, they provide us with an introduction to their way of life, explain
the significance of their traditional attire, and the purpose of each garment.
Now that we know and understand a little more about our hosts, they will show us the ingredients
we will use for our high-altitude cooking class.

After a demonstration and with the guidance of our hosts, we will assemble a stone oven called
HUATIA, which we will use to cook various types of potatoes grown in the community. Afterwards,
we will light a fire in our oven to heat it up.
In the meantime, we will put our culinary skills into action.
We start by preparing the ingredients we need for the delicious Moraya Lawa (dehydrated potato
cream).
The women will show us how they process the Moraya using a grinding stone called a “Batan.”
Then, one by one, we will try our hand at the newly learned technique, using the Batan to turn the
Morayas into flour, which we will use for our cream. Once the ingredients are ready and in the pot
over the stove, we proceed to check the temperature of the stone oven that we left heating. We
remove the fire and place our potatoes, burying them and letting them cook.
While our food is cooking, the ladies will delight us with a demonstration of the textile process.
We will witness how they transform animal wool into yarn and then into garments, using ancestral
techniques passed down from generation to generation.
We will also witness how they obtain various natural colors using products from nature.
Once the textile demonstration is concluded, our food is ready to be unearthed. Very carefully, we
take out our little potatoes from the earth, clean them, and set the table.
Finally, the moment has arrived… it’s time to taste what we have cooked.

After lunch, you can take a time to purchase some of the handmade textiles yours host have for
sale.
Quechua woman will host us to the vehicle which will drive you back to your hotel, singing
beautiful Quechua songs while you walk.
